WHere is a home-style take on a cocktail featured on the seasonal menu. It's a large-volume premix which is packed with tastes associated with holiday season, rendering it perfect for a celebration. Reserve the remaining cordial you can use for breakfast cocktails, puddings, or to mix another batch of bikinis.
Bikini
Serves 10 servings
To make the Citrus Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
To make the Premix (yields 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
For the Cordial: Put all the items inside a pan, bring to a simmer, agitating until the sugar dissolves. After that, take off the stove and let it to reach room temperature completely. Pour into an sealable bottle, cap it and refrigerate it chilled, it can be stored for around a month.
To make Batch Mix: Mix the specified spirits and syrup in a big jug, let it rest for one hour, then strain preferably using a fine cloth, to ensure it's fully clarified.
When ready to serve: Add 85ml of your batch mix into a cocktail shaker packed with ice, and agitate lightly for a minute to chill. Filter into an frosted cocktail glass or equivalent, decorate with the cranberries and finish with a quick spritz of the essential oil above the glass.
